Triumph of Herbs – Majerija (Slap, Vipava Valley, Slovenia)

When we arrived to Majerija rain was falling and no sun was on the horizon. We were searching for the entrance after being refreshed by a shower of  raindrops and strong wind (burja/bora) which was combing the nature around the house and spreading the perfumes of herbs.

The inside was warm and cosy, interior is made out of stone and wood. All the place radiates a positive energy of the owners – Matej and Nataša Tomažič. Everywhere is visible attention to every detail and care for the guests.

When the plates arrived the rainy day got colors. Rainbows of flavors and perfumes fulfilled the room. Every bite was a new discovery, every dish a new story. The passion and care of the owners of Majerija is expressed in the wonderful plates which put regional cuisine on a high level. They don’t pretend to be haute cuisine but they sometimes even overcome it with emotions they evoke with their unpretentious perfection and the richness of tastes.

When we arrived to Majerija it was raining. When we left Majerija the sunbeams broke out through the clouds and made the colours of nature shine in all their beauty. Rich perfumes of herbs made us relive all the flavours of the plates in their natural surroundings. It was magic.

We are welcomed with a glass of the sparkling wine which is produced from grapes Zelen by a few passionate wine makers in the Vipava valley.

Our gastronomic journey starts with a welcome from the kitchen in a form of a slice of fried pancetta which was lying on black bread chips and topped with basil pesto and some drops of local olive oil.

The first plate which follows is a well balanced porcini mousse which is beautifully presented on the plate with cherry tomatoes and aromatic herbs.

This wonderful plate is followed by salami in the company of a fresh cheese cream on mlinci, a thin dry pasta made out of mixture of flours, prepared on a hot plate and coloured with a delicate pesto from different aromatic herbs. (Matej buys salami from a relative who is producing them following the recipe which Matej got from his own grandfather.)

Wonderful lunch is followed with beetroot tagliatelle with pesto from rucula, on cubes of potatoes and tomatoes (picture is missing).

Tagliatelle are followed by a tasty bundle filled with zucchini and covered with sliced tomatoes sautéed in olive oil and decorated with a branch of sage.

Next one is Matej’s delicious version of lasagne with mushrooms and chicken, on a plate enriched with some olive oil, pesto and delicate grated cheese.

After that arrived a plate with a sunny yellow polenta which matched perfectly mouflon in a wonderful sauce with raspberries, marjoram and hyssop.

The sweet ending of the meal was an unforgetable colorful plate – thyme sorbet in a white chocolate decorated with a dark chocolate and served on a garden of fresh fruits and herbs in a sweet soup.

Matej’s plates are not casual – they are results of a great knowledge. Plates of great balance, reassuring, well presented, beautiful to see, inviting and very tasty. Tastes are defined and are result of perfect cooking in which every component is used in the best possible way, including the herbs which are always there.

It’s clear that Matej strongly believes in the products of the territory – he expresses his beliefs also in the choice of the quality wines which are made by the best local wine makers like Primož Lavrenčič, Valter Mlečnik, Zmago Petrič, Čigoj and others.

In Majerija you feel like in seventh heaven enjoying relaxing moments of a great harmony.

Siamo accolti con una flute di spumante a base di uva Zelen che è prodotta da pochi ed appassionati vignaioli nella valle di Vipacco. Si parte con un  saluto della cucina: una fetta di pancetta scottata e adagiata su una  chip di pane nero sottile, condita da pesto di baslico e un filo d’olio locale, a cui segue una mousse di funghi porcini di non comune equilibrio affiancata da pomodorini ed erbe aromatiche in una elegante cornice. Segue un piatto di salame accompagnato da una crema di formaggio fresco appoggiata su un  Mlinci , una sottilissima foglia  ottenuta dall’impasto di tre farine diverse e cotta su una piastra calda e colorata da un delicato pesto verde di erbe aromatiche. Matej spiega che commissiona i salami ad un norcino amico a cui ha affidato la ricetta tramandatagli dal nonno. Si continua con tagliatelle di rapa rossa al pesto di rucola su un letto di cubetti di patate e pomodoro a cui segue una lasagnetta con funghi e gallina circondata da un cerchio di olio, pesto ed un delicato formaggio grattugiato. Continuiamo con un fagottino ripieno di zucchine coperto da una dadolata di pomodorini spadellati in olio di oliva sormontati da un ciuffo di salvia . Adesso nel piatto c’è una solare polenta gialla ad accompagnare del muflone con salsa , lampone, maggiorana e issopo. Ora tocca ad un indimenticabile piatto colorato, un sorbetto di timo in camicia di cioccolato bianco striato da salsa di cioccolato fondente su un giardino di frutta fresca e erbe in una zuppa dolce.  I piatti di  Matej, non sono casuali, dietro c’è una grande conoscenza. Sono in grande equilibrio , rassicuranti, presentati bene, belli da vedere, invitanti e molto buoni da mangiare. I gusti sono definiti e provengono da cotture perfette in cui ogni componente viene usato nel modo migliore, comprese le erbe aromatiche che sono sempre presenti. Si intuisce subito che Matej crede molto nei prodotti del territorio anche per quello che riguarda i vini di qualità che vengono proposti a tavola che provengono da aziende locali molto importanti :  da Primož Lavrenčič a Valter Mlečnik a Zmago Petrič , Čigoj e altri.
A Majerija sembra di essere sospesi nel cielo e si vivono momenti rilassati in grande armonia.
