Art of the “poor cuisine”: Ana Roš with Damjan Fink and Joško Sirk with Alessandro Gavagna
Chef Ana Roš loves challenges. Her next challenge to herself and to her colleagues from Slovenia and abroad, which was inspired by the economical crisis, is to create stunning dishes with simple, “poor” ingredients. Low cost cuisine of a great mastery.
At the first from the series of events under the name “ART OF THE “POOR CUISINE” which took place at “Gostilna na gradu” in Ljubljana on Wednesday 23rd January were guests the legendary Joško Sirk and Alessandro Gavagna from the Michelin starred La Subida from Cormons in Italy. Restaurant which enchants every guest with the excellent cuisine and the great cordiality of the family.
And what have chefs prepared for us?
Winter in the garden and in the pantry (Ana Roš)
“Toč” as suggested by Gianni Cosetti (Alessandro Gavagna)
In the fish market at the end of the day and at the bottom of the cases (Ana Roš)
Pasta with what winter has brought (Alessandro Gavagna)
A walk of our goose, hawthorn, apple and horseradish (Alessandro Gavagna)
Sorbet from rebula vinegar (Alessandro Gavagna)
Story about the sweet egg (Ana Roš)
The winemaker of the evening was Martin Krapež from Vipava, who cultivates with great mastery the fruits of nature.
